The first ruby chocolate I tried was from Trader Joe’s. When I first bought it, I didn’t realize it was being regarded as a new variety of chocolate, the fourth one, next to dark, milk and white chocolates. Made from ruby cocoa beans, ruby chocolate is slightly tangy, with a tinge of berry flavor. It also has a distinct pink hue. A chocolate that is pretty in pink. The chocolate manufacturer Barry Callebaut Group based in Switzerland created ruby chocolate. It’s sold in the US under different brands such as Trader Joe’s Ruby Cacao Wafers, which I believe is no longer available. I have since discovered other brands, like a Kit Kat (in Japan), which I have yet to try. Here in the US, Chocolove also has a ruby chocolate bar, which I’m going to be chopping today. ► Chopping Ruby Chocolate

Ingredients:
3 ruby chocolate bars

Directions:
Unwrap chocolate bars.
Wear gloves to prevent melting the chocolates with your bare hands.
Place the chocolate bar on a chopping board.
Cut the chocolate bars at an angle with a knife.
Place the chopped chocolates in a container and store in a cool, dry place.
